1 large whole boneless chicken (reserve bones for stock) 1 pack mc cormick cajun spice 2 stalks lemongrass pounded
stuffings: 4 c cooked jasmine rice (basmati pag sosi ka!) 5 pcs garlic crushed 1 big white onion minced 1 small red, green and yellow bell peppers diced (any color will do, no diff or whatsoever in taste, presentation only) 1 large carrot diced 5 big pcs shiitake mushrooms/ button chopped turmeric powder leftover meat olive oil/ any oil salt, pepper
procedure:
dry- rub chicken with cajun spice and stuff with lemongrass, set aside
stuffing: saute onion, garlic and mushrooms in olive oil add left over meat, rice, turmeric powder: cook until transluscent add chicken stock medium heat until nearly done add bell peppers, carrots and salt, pepper to taste adjust seasoning
let cool
stuff the chicken and bake or turbo broil for 45 mins @ 175F
serve with cheese fondue and veggies as sides
chicken stock: chicken bones 1 part each celery, carrots, leeks and white onions BSS- boil, simmer, skim
