basically you can use anything. you can get a mix of road & mtb components. road or mtb frame (make sure it has rack mounts on the frame and fork), drop bars, road sti shifters, cantilver brakes (v brakes dont work with some road levers), triple road or mtb cranks, any cassette or deraileurs. the hard core touring buys suggest a steel frame because they're strong enough to carry the additional load and, if they break, they can be repaired by welding. they also use 26" tires because they're sometimes they're easier to get the road tires. cantilever brakes are preferred because you can fit them over wider tires and because they work better w/ road levers then v-brakes. downtube or bar end shifters are preferred because they're more reliable then the newer-index type shifters (sti). frames are usually very solid because some tourers carry as much as 70kilos on their racks. frames geometry is also more relaxed because of the hours spent on the road.all in all, the hard-core tourers are a very interesting cycling sub-culture. for an example of touring bike set-ups, check sme of the more obscure bike brands like Dawes in the UK (http://www.dawescycles.com/dawes/touring-series.htm)
