escargot with pasley/ cilantro butter... FRENCH STYLE (shells removed)
1 slab unsalted butter (magnolia gold or anchor) 1 red onion finely diced 4 cloves garlic miced 3 tbsp finely minced parsley (if you want it mind) or cilantro (if you wANT it spiced)salt/ salt/ pepper
soften the butter by thawing it out mix all ingredients shape in a container or cling film
toasted bread (anything will do) escargot butter mixture
arrange the bread, escargot, and butter put in an oven toaster until butter melts
delicious appetizer pair with champagne or red wine!!!

speaking of budget... i held my bday celebration last july with a budget of only 1000 pesos for food and i was able to feed my almost 20 visitors. i have posted my recipes here. just take a look at my previous postings...
here are the menu... and here are some of my substitutions: 3x450 gm of linguine: asian seafood pasta- used tuna in can as meat 1 kg pork belly: used fried tofu as extenders 2 kg of chicken adobo w/ curry: used neck (32pesos/kg) and back part (36pesos/kg) (can be bought at supermarkets)
of course with some home stocks but major ingredients are bought...

yield: 1 batch
1 ginebra "bilog" gin 500 ml sprite 500 ml red horse 1 litro pack lemon iced tea 1 lemon
combine all ingredients and served ice cold! guaranteed... i was able to make a total of 19 liters and everyone went home happily ever after... AYUS!

the concept of vinaigrettes is based on acid + oil (dont be afraid to experiment just always remember the concept) use a blender to mix the ingredient bec acid and oil dont normally mix store in the ref you can have it thin or thick, whichever way you want it...
balsamic vinaigrette 2 tbsp balsamic vinegar 2 tbsp olive oil a pinch of the ff dried herbs (basil, thyme, rosemary, tarragon) whatever you wish, dont be afraid to experiment sugar salt/pepper
lychee vinaigrette (my favorite!!!) 3 pcs. lychee fruit 2 tbsp lychee juice 2tbsp olive oil herbs salt/pepper
macopa vinaigrette (1 of a kind!) 1 pc. macopa 3 tbsp olive oil sugar salt/pepper

ginataang isda gourmet style
1 kg tanigue fillet cut into serving pieces (buy a whole fish and take home the head and bones) flour for coating
gravy: 4 cloves garlic crushed 1 med onion sliced 3 cups coconut milk + kakang gata reserved 1 orange (rind only) chopped 1 tsp ginger grated or crushed finger chili for garnish (siling pansigang) salt/pepper
oil for deep frying
cut fish into serving pcs. marinate with salt pepper. set aside
put all ingredients in a pot including fish heads and bones except kakang gata reduce by half osterize and strain add salt/ pepper
coat the fish with flour and deep fry. tanigue will only take a few minutes to cook set aside
blanch your favorite veggies (carrots, pechay, peas, etc.)
arrange in a platter...
serve with hot steaming rice...

i enjoy this thread as much as i enjoy mountain biking! i too have this fascination (and hunger) for good food, from sardinas with lots of onions to the more sophisticated meat/fish dishes. thanks for the recipes! thank you sir for the appreciation. will be posting as much sooner... enjoy great food and great ride

seafood curry pasta
500 gm pasta
sauce: 50 gm of each mirepoix: carrot onion leeks celery 50 gm bell pepper lemongrass (optional) 1 pack strawberry yoghurt
30 gm authentic curry powder water
2 can tuna in water 1 cucumber diced 1 can button mushroom/ tofu (extender)
saute mirepoix, bellpepper, lemon grass add curry powder add water and reduce
osterize and strain
saute mushroom and tuna add yoghurt add sauce... add lemongrass adjust seasoning
toss with pasta and cucumber before serving

grilled mustard- lemon chicken breast fillet with lemon- butter sauce... (HEALTHY!)
1 kg chicken breast fillet 100 ml prepared mustard 2 pcs US lemon, squeezed (reserve rind, chopped or grated and 1 tbsp jus for sauce) 1/4 c white sugar salt/ pepper/ paprika
mix all ingredients to marinate chicken except paprika. let sit for 30 minutes. cover with paprika before grilling.
grill for 3 mis on each side
great with lemon butter sauce
lemon- butter sauce: 1 tbsp lemon jus 1/2 slab unsalted butter (pref anchor) dash of rosemary and thyme (crumble with your fingers to extract flavor) salt/ pepper
soften butter in room temp and add all ingredients. mix well
IMPORTANT TIP/ TRIVIA:
we pinoys dont usually eat breast part coz we know it is tasteless and hard. mind you, we just dont know how to cook it properly.
ways to cook chicken breast fillet: grill: 3 mins each side
sear: [(high flame, small amount of oil/ water, never butter coz it has a low smoke point (madaling masunog)]
30 seconds on each side. its done. believe me.

creamy carabao milk panacotta with spicy fruit salsa
1 liter whipped cream (anchor/ president) 300+ 1 pack cream cheese (substitute for more expensive mascapone) 100+ 1 liter carabao milk 50+ 1 pack alsa gulaman, plain
rest cheese in room temp until soft in a pan over a low flame, put cream, cheese and milk and stir until free from lumps. bring to a boil and add gulaman. mix until firm. turn off heat, put in molder, set aside and let cool
spicy fruit salsa
1 big can crushed pineapple 1 pc apple chopped 1 pc orange, juiced 15 pcs grapes, chopped nutmeg/ cinnamon/ all spice (it up to you to decide on how spicy you would want)
combine all ingredients and top into panacotta
eat chilled!
TRIVIA: pana cotta: italian word w/c literally means cooked milk pana: milk cotta: cooked

grilled chicken teriyaki spread
(great for sandwiches! alternative for your good old but boring nilagang picho ng manok!)
1 kg chicken breast fillet 200 ml teriyaki sauce
1 liter mayonnaise 100 gm chopped celery 3 tbsp red and green bell peppers 1/2 c white onion 2 tsp finely chopped garlic salt/ pepper
marinate chicken in teriyaki sauce for 20 mins. grill for 3 mins each side cut into cubes 1x1 cm for a chunkier chicken
mix with all remaining ingredients

CREAM OF LEMONGRASS SOUP
base: 1 kg peeled potatoes, chopped 200 gm onion leeks 200 ml white wine 4 stalks pounded lemongrass, white part only 15 liters water
saute potatoes, lemongrass and onion leeks until wilted (lanta). deglaze with white wine. add water. bring to a boil and reduce until 2/3.
set aside. let cool and puree. strain.
to finish: 375 ml whipped cream 1/2 slab anchor butter salt/ pepper

BTW,
i also do accept orders if you want a first hand experience on the recipes ive posted. i also do live demo for cooking on your parties for on hand chef wannabe experience.
im proud to say that i cook all of them from scratch, i dont use MSG, uses french cooking method...
doesnt believe in eating mediocre food we all are tired to eat over and over again and most of all...

heeey, i thought you're in Merlion island? you're back? he he he yes i am back sir ;D was denied of E-pass. govt didnt believe that i can be competitive on the city-state coz of short experience. my almost employer told me to go back to him after i gained some more experience here. anyway, based from the things ive posted, who would believe i wont be a tough culinarian on their island anyway, i am currently working as a QC officer and grill man at a soon to open american steak house at robinson's ermita. holy cow! thanks for this nice welcome. yes HOLY COW steak ranch and american grill. located at 1st floor midtown wing robinson's ermita. you wont miss coz its at the mall entrance. we serve tex-mex, aussie and american comfort foods. prices are competitive. specialty steaks are the only expensive. around 1100 pesos for 10 oz. USDA certified angus rib eye. but everything else is affordable. let me ask you guys a favor... since i have tons of ideas as your self proclaimed resident chef here PinoyMtBiker... it will be my pleasure to answer your querries on foods... like what we have at the downhill rush like fafa buddy and the FAB crew does... its my pleasure to help you in anyway i can... know hows on food, how to cook, how to alternate, where to buy, whats the best food to eat at times...
